Italian Tiramisu - Michael De Filippis

4-6 Servings

Prep Time- 30 min
Chill Time- 3 hrs

Ingredients

           8 cups Brewed Espresso (or strong coffee)
           ½ cup Amaretto (or Favorite Brandy) add to coffee
5 Egg Yolks
           ¼ cup White Sugar
           18 oz Mascarpone Cheese   
5 Egg Whites
¼ cup White Sugar
1 package of Lady Finger Cookies
1 cup Cocoa Powder (Sprinkled as desired)
1 bar Solid Dark or Milk Chocolate (personal Choice) Grated

Method of Preparation

1.     Beat egg yolks and ¼ cup of sugar till thick and ribbons form.
2.     Fold Mascarpone into egg yolks.
3.     Beat egg whites and ¼ cup of sugar till stiff peaks form.
4.     Fold egg whites into Mascarpone mixture; add 1/3 of the egg white at a time.
5.     Dip lady finger into coffee; just to soak in some coffee into the cookie.
6.     Placed soaked lady finger cookies into a 9x9 baking pan; side by side forming a layer of cookies.
7.     Place a scoop of the Mascarpone mixture over the cookies and spread evenly.
8.     Sprinkle cocoa powder over mascarpone mixture; as much as desired.
9.     Repeat steps 5- 8 till no more cookies.
10.  Add grated chocolate on top of the tiramisu (as much as desired)
11.  Place in refrigerator to chill for 3 hours.
